First time for me, dehydrating potatoes. But I looked at this video before I started the process, because I really really really don't like having to blanch vegetables (or should I state that I really don't like feeling I have to blanch?).
Here is a photo of how my potatoes turned out (five trays all dumped onto one tray):
Yep, they're gray-ish. They do not look very appetizing.
So I decided to re-hydrate a handful, and then fry them up and eat them, like the gentleman in the video. Taste Test!
Absolutely delicious! No blanching of potatoes for me ever!

So the texture was okay? Actually now that I think of it, the scalloped potatoes in the box are dehydrated and those are fine when cooked. Must try this. I never got around to trying to dry cranberries yet.
ReplyDeleteHey Poodle! Yep the texture was fine! I normally wouldn't think of dehydrating potatoes because, well, we don't grow them! And most of the stuff I have preserved have been things from my gardens, but we had bought a big bag of potatoes for really cheap, and they weren't going fast and I was afraid they'd go bad. I'm glad I did it!
DeleteMy mom gave me some potatoes that she wasn't going to use and so I had too many taters and I tried drying them today. I blanched mine and dipped them in Fruit Fresh and water although my book said to use lemon juice. I didn't have lemon juice. They look just like the ones in the boxes of scalloped potatoes! I can't wait to try them out in some recipe.
